Ingredients:
5-6 medium carrots – shredded
1/2 cup of Greek yogurt
2-3 cloves of garlic (adjust according to taste)
salt and pepper to taste
Method:
- Add a small amount of olive oil to a pan, and on medium heat, slow cook shredded carrots until soften.
- Set aside the cooked carrot to cool down.
- Once cooled, add the remaining ingredients, stir and enjoy!
