Carrot Dip

Serves: 4 | Prep time: 15 minutes | Level: Easy

Ingredients:

5-6 medium carrots – shredded
1/2 cup of Greek yogurt
2-3 cloves of garlic (adjust according to taste)
salt and pepper to taste

Method:

  1. Add a small amount of olive oil to a pan, and on medium heat, slow cook shredded carrots until soften.
  2. Set aside the cooked carrot to cool down.
  3. Once cooled, add the remaining ingredients, stir and enjoy!
